About this recipe:
In my new release BEWITCHING LOVE, Dream and Grant try to whip up some fajitas for dinner...but Dream's love spell takes over and they wind up skipping straight to "dessert." Here is the recipe they would have used if they'd gotten that far:
Bewitching Chicken Fajitas
2 tablespoons vegetable oil
2 cloves garlic, minced fine
1lb. skinless, boneless chicken breast, cut into strips
1 medium green pepper, cut into 2-inch strips
1 medium onion, sliced
1 can cream of mushroom or cream of chicken soup
1/2 cup of your favorite salsa
8 flour tortillas
1 cup Jack or Mexican blend cheese, grated
Optional additions:
diced fresh tomato
sliced avocado
chopped fresh cilantro
sour cream
Directions:
Heat oil in a large skillet. Cook garlic until soft, about 3 minutes. Add chicken and cook on medium-high heat, stirring often until no longer pink on the inside and golden brown. Reduce heat to medium and add green pepper and onion slices. Cook, stirring often until vegetables are done to your liking (I like them to still have a bit of crispness). Stir in soup and salsa until everything is well combined. Heat through.
To prepare fajitas, warm tortillas and spoon some chicken mixture inside. Top with cheese and more salsa if you want. Add other optional garnishes to taste. Serves 4 (assuming 2 fajitas each).
