It's Too Yummy Tuesday!
On select Tuesdays I share delicious recipes either inspired by my books or that are just plain delicious! Today I'm happy to have special guest Rebecca J. Clark, author of The Checklist Diet. She's here sharing her recipe for crockpot chicken. Take it away!
Crockpot Salsa Chicken
This is my go-to meal
when I have “nothing” in the house for dinner. I always have these ingredients
on hand.
Boneless,
skinless chicken breasts
1
cup salsa
1
can black beans, drained
1
cup corn (frozen or canned)
Dump
all the above ingredients into the crockpot. Cook on Low all day or High for
3-4 hours. Shred the chicken and pour over brown rice or wrap in a corn
tortilla. Serve with a side green salad to round out your meal.

ReplyDeleteThis recipe IS super easy. I like it best over rice, but my family likes it wrapped in a tortilla. It's even better the next day.
