It's Too Yummy Tuesday!

Some of you know I have another blog called Experimental Positivity, and this past week one of my daily challenges was to invent something new in the kitchen. So I played around with some stuff I had on hand and devised a little yummy treat that I decided to share with you.
The candies need to set up in the freezer, but don't fret--they'll be ready within minutes. So if you're looking for a quick fix when craving sweets, this will fit the bill.
Consistency winds up like cake batter |
3 Tbsp coconut oil
3 Tbsp peanut butter
1/4 cup cocoa powder
1/3- 1/2 cup powdered sugar
Directions
Put coconut oil in microwave safe, medium-sized bowl and melt 15-20 seconds. Stir in peanut butter until combined. Add dry ingredients until well mixed with no lumps. The consistency should resemble something like a cake batter, thick enough to spoon into circles that will spread out a bit, but not too runny to hold their shape. You may need to add a bit more peanut butter or powdered sugar to get the consistency right.
Drop spoonfuls of chocolate onto a cookie sheet lined with foil, spread into rounds. Pop into the freezer until set up. Remove from foil and store in a tupperware or plastic bag in freezer. They begin to melt pretty quick after taking them out, but this isn't much of a problem for me since I gobble them up fast. Ha.
