It's Too Yummy Tuesday!

If Valentine's Day didn't quite satisfy your sweet tooth, I've got a quick and easy one for you today that is guaranteed to melt in your mouth and make you smile!
I'm a fan of practically anything with the word "fudge" in it, and this recipe is no exception. For those of you interested in saving a little in the fat/calorie department, try this recipe with the PB2 powdered peanut butter featured in my post Chocolate Peanut Butter with only 1 Gram Fat! (The chocolate variety is what I mentioned there, which would be great with this--but it isn't required.)
Easy Peasy Peanut Butter Fudge
Ingredients
2 cups sugar
1/2 cup milk
1 tsp. vanilla
3/4 cup peanut butter (prepared, if using the PB2 powdered style)
Directions
Bring sugar and milk to a low boil in a medium saucepan. Stir carefully and often so the milk doesn't scald/burn and stick to pan (I like to use a heavy, nonstick pan for this recipe.) Boil for 2 minutes; remove from heat and stir in peanut butter and vanilla until well mixed.
Pour into a greased 8" pan. Cool and cut into squares.
Enjoy!
