On select Tuesdays I share delicious recipes either inspired by my books or that are just plain delicious! Today I'm happy to have special guest P.J. MacLayne, author of Wolves' Pawn. She's here to share her recipe for lasagna. Take it away!



Mom's Easy Lasagna

            This is a recipe my mother shared with me when I first got married.  I wasn't much of a cook then, but this soon became one of my husband's favorite dishes. What I like most about it is the many ways you can switch it up to suit your own taste.
             Dot, the heroine in my book, Wolves' Pawn, hasn't enjoyed a home-cooked meal for quite some time, but I can imagine her mother cooking this dish for her.

            Mom's Easy Lasagna

4 c wide noodles, cooked
1 c cream style cottage cheese
1 15 oz can spaghetti sauce with meat
¼ c shredded cheese (American or Mozzarella)

Place one layer of noodles in dish, cover with cottage cheese and sauce. Repeat with another layer. The third (final) layer you will cover with sauce but no cottage cheese. Sprinkle the shredded cheese on top of this layer. Be brave and substitute a mix of Mozzarella and Parmesan and use ½ a cup instead of ¼ cup for the top layer. Bake at 375° for 20-25 minutes.

That's the official recipe. I normally use more spaghetti sauce than the recipe calls for, because I like lots of sauce. You can also brown a pound of ground beef and add it to the layers. Want to get really crazy? Substitute ricotta cheese for the cottage cheese. Enjoy!
