Shortbread Cookies with Toblerone -Guest Author Mary Lou George



It's Too Yummy Tuesday!

On select Tuesdays I share delicious recipes either inspired by my (or other authors') books or that are just plain delicious! Today I'm happy to have special guest Mary Lou George, author of Saving Destiny. She's here to share a recipe for the most delicious-sounding whipped shortbread with Toblerone cookies. Take it away, Mary Lou!


In my latest book, Saving Destiny, Sloan and Mac’s road to happily-ever-after is littered with so many potholes one could be forgiven for thinking it’s just not going to happen, but one of the things our lovers can agree on is food.  When they’re manipulated into planning a baby shower together, Sloan spitefully tortures him with suggestions that they should serve eel.  His response?  “Hey, for entertainment, why not play Yoko Ono records? That oughtta make this the shortest party in state history.” Happily, in the end they agree on the menu and end up sharing Kentucky fried goodness at the local diner. 

With this recipe, the only thing to fight about is who gets the last cookie: 

Mary Lou George’s Love Bites – Shortbread cookies with Toblerone

Ingredients:
1 lb (454g) butter at room temperature
1 cup icing sugar
½ cup cornstarch
1 tsp vanilla
3 cups all-purpose flour
1 cup chopped pecans (optional)
1 Toblerone chocolate bar (depending on how large you want the chocolate pieces to be on the cookies, you might want two bars…and I’ve known to eat one while the cookies are baking)

Directions:
Preheat oven to 325 degrees
Cream butter and icing sugar until very fluffy
Beat in cornstarch, vanilla and then flour.  Beat until batter is light and very fluffy. (a food processor works well for this)
Stir in nuts if using.  (I don’t use them) 
Drop batter by teaspoons onto parchment paper.
Chop Toblerone into small pieces
Bake 20-25 minutes or until golden.   
While cookies are still hot place a small piece of chocolate on each one.
Sprinkle on icing sugar if desired

Makes 120 bite sized melt-in-your-mouth cookies.  Seriously, they melt in your mouth.

Saving Destiny

About the Author
