A couple months ago I posted about PB2, a delicious, low-fat chocolate peanut butter. Today I have another healthy product to share with you--vegetarian meat crumbles that cook up like ground beef. I used these to cook up one of my husband's signature dishes--Joe's Special.
Boca Veggie Ground Crumbles

They cook up in a skillet just like you would ground beef, and right away I noticed they smelled great! My kid even came out of her room to ask what was cooking. Even though I added no salt, onion, garlic, or anything to it, the crumbles were quite flavorful. When I cook up ground turkey etc., it can be very bland without seasonings.

Joe's Special recipe:
Ingredients
1 lb ground meat (turkey, beef, or the equivalent in vegan crumbles --about 3 cups)
1 pkg frozen spinach
3 cups cooked rice
2 eggs (or equivalent of egg substitute, about 1/2 cup)
Soy sauce to taste
Directions
Brown meat in skillet until cooked; drain (not necessary with vegan crumbles). While meat is cooking, prepare spinach according to package directions. Combine meat, spinach, and rice in large bowl; toss to combine. Scramble eggs in skillet until desired doneness; use spatula to chop into small pieces. Toss with meat mixture. Sprinkle with soy sauce to taste.
Serves 4
