I found this recipe on closetcooking.com, and if you like garlic bread and/or artichoke dip, you'll LOVE this! It's a bread and a dip in one--sort of.  Smells great and tastes even better. The inspiration for this is my current work in progress, book 6 of the LONE WOLVES OF SHAY FALLS series. I do believe my heroine is going to prepare this dish before long.


ARTICHOKE BREAD

Cut fat and calories by substituting light mayo, reduced fat cream cheese, non fat sour cream (or plain yogurt), reduced fat parmesan, and part skim mozzarella. 



Ingredients

    1 (14 ounce) can artichoke hearts, drained and chopped
    2 green onions, sliced
    2 cloves garlic, chopped
    4 ounces cream cheese, room temperature
    1/4 cup mayonnaise
    1/2 cup sour cream
    1/2 cup mozzarella, shredded
    1/4 cup parmigiano reggiano (parmesan), grated
    1 loaf Italian bread, sliced in half lengthwise

Directions

    Preheat oven to 350 degrees. Combine artichoke hearts, green onions, garlic, cream cheese, mayonnaise, sour cream, mozzarella and parmigiano reggiano--reserve about 1/4-1/3 of the cheese.  Mix well. Hollow out about 1/2-inch of the center of bread (both halves).  Spread the mixture in the hollowed out bread; top with reserved cheese. to the hole in the bread slices and top with the reserved cheese. Cover with foil loosely; place on baking sheets and bake for 20 minutes.
